Hello,
Open "Uninstall SplashtopRemoteStreamer.scpt" which could be found in Streamer installer package. Press run button to execute the script then it will uninstall Streamer completely from your Mac.

I removed it from my iMac, not sure about a mini if it would do the same.
The key is to open Splashtop first, go to settings and log out. Then in top right of screen exit from its icon.
Open applications and drag Splashtop icon to trash and your done

Just one more bit of info for those stumbling across this post... The first step is to head over to the Splashtop download page //www.splashtop.com/downloads
This may seem unintuitive, but you must first find the Splashtop Streamer install package... launch it on your mac, and inside that directory you will be presented with the uninstall package...
